Guiyang is the capital of the Guizhou providence, located in Southwest China. It is a really special travel destination! There are tons of things and places to see, and of course, amazing food to eat. Guiyang cuisine is known for its special flavors, and most of them are very spicy! While in China pork is king, Guiyang has a number of vegetarian and vegan options that are really good! Here are our top 3 favorites, just remember, we warned you about the spice!
Sour Soup Siwawa (丝恋)
Sīwáwá (丝娃娃), or silk babies, is a fantastic introduction to Guiyang food! They are kind of like small vegetarian Chinese tacos. When you order these you get a giant stack of soft rice flour wrappers, small plates of different veggie and tofu salads, and hot and sour soup which you pour in the taco after you stuff it. These are so delicious, you might eat more than one order!
Chǎofàn (炒饭)
If you are in China and you see someone with a wok, they probably make chǎofàn (炒饭), or fried rice. This is a late night favorite! There are street vendors everywhere who will make you a customized version with whatever you chose. If you are into it, you take a bowl, some tongs and fill it up with ingredients. Some things you can pick from including smoky tofu, shredded potato, napa cabbage, onion, and carrots. Stack the bowl as high as you want, hand it over, and with the help of a wok, boom! You have a delicious meal. Make sure you are careful about how much spice is added, Giuyang is known for the spiciest food in China!
Jianbing (煎饼)
Jiānbing (煎饼) is great for a fast lunch or late night snack! Besides the great taste, the best part is watching it being cooked right in front of you! So what is it? It is a wrap made with egg, pickled veggies, cilantro, and hoisin sauce. It is cooked and folded on the griddle, and you can also customize this dish! It is really tasty, filling, and inexpensive! If you are anywhere in China you can usually find this, but the Giuyang versions are a little extra delicious in our opinion!
